3 boiled chicken breasts
1 c. quinoa
1 yellow onion, diced
6 cloves garlic, crushed and minced
3 carrots, sliced
broccoli, chopped
chicken broth
salt
pepper
lemon pepper
manchego cheese, shredded
parmesan cheese, shredded
fresh mozzarella, shredded
Cook quinoa according to directions, using chicken broth. Cover bottom and sides of deep oven dish with olive oil. Add cooked quinoa, chicken breasts (loosely broken up), veggies, and a little more chicken broth. Stir in cheeses and spices. Bake, covered, in 350 degree oven for 30-45 minutes. Stir half-way through cooking. Serve with green salad.
