5-10 lbs. (freshly picked) organic tomatoes, cleaned and pureed
1 med. yellow onion, diced
4-5 cloves of garlic, crushed and minced
1 large carrot, chopped
peas
extra virgin olive oil
balsamic vinegar
italian seasoning
salt
pepper
Salt and bring pureed tomatoes to a boil in large pot, then simmer over medium heat to thicken (about 45-60 minutes). Meanwhile, heat a generous amount of extra virgin olive oil and balsamic vinegar with italian season in saute pan over medium heat; add garlic and onions when oil is hot. Saute garlic and onions until not quite clear and then add chopped carrots; stir until coated and take off heat. Add veggie mixture to tomatoes. Salt, pepper, italian seasoning. Add peas and let simmer over low heat for about 20 minutes. Serve over whole wheat spaghetti noodles and top with parmesan.
Served with garlic bread and green salad.
