Scrambled Eggs

4 (backyard) eggs
Whole, organic milk
onions
mexican cheese blend
butter
broccoli*
avocado

In a bowl, beat eggs and mix with a little milk. In fry pan, melt butter over medium heat. Add egg/milk mixture and onions. Scramble. Add in broccoli. When cooked, top with cheese. Serve with avocado and whole wheat toast, or put in a cooked tortilla with homemade salsa for a burrito.

*I always just add whatever veggies we have on hand and sound yummy. 

**This is a fall back dinner, especially during the periods we don't eat eggs for breakfast. It's quick, easy, healthy, and we always have the supplies on hand.
